グリベネス

グリベネスgribenesイディッシュ語:גריבענעס)とは、ニワトリガチョウの皮をタマネギと共に揚げて作られる油かすで、シュマルツを抽出する際の副産物である[1][2][3]グリーヴェンgrieven)とも。かつてはアシュケナジムの好物とされ[2][3]ユダヤ人物語寓話にも引き合いに出されることの多いカシュルート食品である。

ハレの食事

ハヌカーローシュ・ハッシャーナーといったユダヤ教祭日との結び付きが強く[2][3]、伝統的にはハヌカーの際、ジャガイモクーゲルラトケスと共に供されていた[3][4]。また、料理に大量のシュマルツが古くから用いられていた過越とも関係が深い[2][5]

利用法

をふってライ麦パンパンパーニッケルに乗せたり[6] 、チョップト・レバーに入れる[7][5]など、軽食に用いられることが多い。また、ライ麦パンにはさんだパストラミホットドッグの副菜や、夜食オードブルとしても供される[7][8][9][2][8]ルイジアナ州のユダヤ人の中には、非カシュルート食品であるエビの代わりにジャンバラヤに入れる者もいる[2]。おやつとしてハッラーにのせて子供に与えることもあった[3]
